Farming : Pruning in Guyot Double. Manual green pruning. Green Harvest.

Harvest : 100% hand harvested in small baskets directly from the rows. Vibrating sorting table at the winery’s entrance.

 

Vinification

Fermentation : Total destemming
– Direct cold pressing
– Thermo-regulated vinification (17-18°)
– Raised on fine lees.

Aging: : 20% in barrels, 80% in tank

 

Taste

A clear pale yellow robe.

A clean and pleasant nose, which mix white fruits and citrus fruit tastes. (Vinepeach, grapefruit). Followed by some notes of currant leaves, boxes trees and acacias.

The aeration brings exotic notes such as pineapple and mango. Thus, we can expect for a dry and concentrated wine with a bright acidity. On the palate, the wine is clear, fresh and fleshy.

In its evolution, this is a lively wine with a fine textured. The product is well balanced with a fresh citrusy flavor with a long persistence.
